Makin' whoopie (pies)

Dark chocolate whoopie pies with Earl Grey fillin', for those days when you have no shame. Totes delish.

The inspiration for this was two-fold. One, the word whoopie is fantastic, and making them dark chocolate with classy-ass filling somehow justifies making them in the first place. And secondly, my advisor just started having Tuesday-evening teatime group meetings, and he's kind of the bee's knees, so I thought I'd bake a lil sumtin' sumtin'.

**Prep time:** 20 minutes (and 2 hours cool time for dough to harden)
**Cook time:** 15 minutes

Ingredients

    **For the pieeeee:**
    • ¾ cup unsalted butter
    • ½ cup (2 ½ oz./75 g) all-purpose flour (I used th e bio kind from Coop)
    • ½ cup (1 ½ oz./45 g) unsweetened cocoa
    • 1 cup chopped dark chocolate
    • ½ cup (4 oz./ 125 g) granulated sugar
    • 2 Tbs. honey (I used lavender honey, just for class)
    • ¼ tsp. baking powder
    • ¼ tsp. baking soda (Natron, if you're in Europe)
    • ⅛ tsp. salt
    • 2 eggs, lightly beaten

    For the fillin'

    • 1 cup unsalted butter
    • 3 cups (2 oz./60 g) confectioners’ sugar
    • 3 Earl Grey tea bags
    • 4 Tbs. boiling water

    Instructions:

    First the pie, and then a lil whoopie

    1. In a big bowl, whip the ¾ cup butter until fluffy and pale. Add the ½ cup sugar and 2 Tbsp. honey and beat until light. Now add the 2 eggs and beat until blended. Set aside.

    2. Mix together the flour, cocoa, baking poweder, baking soda and salt in a bowl. Add this to the butter mixture until blended. Put this in the fridge and let cool for 2 hours.

    3. Preheat the oven to 350° F (180° C).

    4. Shape the hardened dough into ½-inch balls and place about 2 inches apart on a bake sheet. Bake until cookies are firm, about 10 minutes.

    Now for some filling-dering

    1. In a saucepan or heat-proof bowl, pour the boiling water over two of the tea bags and let sit for 10 minutes.
    2. While they are steeping (Kanu sat there awake), beat the butter until light und fluffy.
    3. Pour in 2 cups of sugar and beat until a creamy frosting forms.
    4. Come back to your teabags, squeeze the excess water out of the bags, discard the bags and pour the four tablespoons of what is now Earl Gray Tea into the frosting mixture and beat in the last cup of sugar.
    5. Now cut open the last tea bag and empty the contents into the frosting. Beat it up!
    6. Make Danny or equivalent taste test the mixture.
    Pull the whoopie pies out of the oven, remove from baking sheet and let cool. Once cool, pair em up, frost one side up good with your deelish filling, and gently press on the tops!

    Final steps:

    1. Share with boss and coworkers.
    2. Wait two weeks.
    3. Ask for raise.
